Vegetable Frittata With Village Alpine Meadow


ALL YOU NEED
Vegetables:
Onion, green pepper and mushrooms
Cooked, drained spinach, sweet red pepper and eggplant
Diced cooked potato, asparagus and drained oil-packed sun-dried tomatoes

Meat or Fish:
Diced ham or Polish sausage
Cooked shrimp, flaked salmon or meatless
Salami, pepperoni or meatless

Herbs:
Parsley
Oregano
Basil

Village Cheese:
Village Alpine Meadow (Swiss)

Preparation
In a 10-inch (25-cm) non-stick frying pan, stir-fry 2 cups (500 mL) cut-up Vegetables and 3/4 cup (175 mL) Meat or Fish in a little melted butter.
Beat together 8 eggs, a handful of Village Alpine Meadow Cheese, 1/4 cup (50 mL) milk and Herbs to taste. Pour into pan. Cover and cook over medium-low heat until eggs are almost set, 10 to 12 minutes.
Sprinkle with more Village Alpine Meadow and broil until eggs are set and cheese is melted.

For a meatless variation increase Vegetables to 3 cups (750 mL).
