Pacific Salmon™ Cheddar, Omelette with Avocado
ALL YOU NEED
1/8 cup red onion, julian or sliced
1/2 ripe avocado
3 -4 large eggs
2/3 cup Village, Pacific Salmon™ Cheddar (shredded
2 teaspoons butter
Chopped, fresh cilantro
Salt & Pepper
Preparation:
Slice onion. Half, pit and peel avocado and cut into 1/4' pieces. In a bowl, whisk eggs, seasoning and cilantro. In a non-stick skillet, heat butter over moderately high heat, saute onions ans season. Add egg mixture stirring constantly for approximately 2 minutes or until eggs set up complete;y, covering bottom of pan. Add avocado and salmon cheddar. Flip eggs into half moon shapes. Place on plate.
