Village Cheddar Beef and Onion Melt


This great summertime recipe was submitted by Mike Voigt, Owner and Chef of the Eagles Nest Restaurant in Enderby, BC. This webmaster and spouse had the opportunity to sample this delicious treat. Try It, you'll love it!

Ingredients: (per serving)
4-6 oz. sliced roast beef
1 slice diagonally cut french bread
1/2 tbsp garlic butter
1/2 cup au jus
2 oz Award winning Village Cheddar
2 oz. sliced purple onion

Preparation:
Simmer roast beef in au jus, spread garlic butter on both sides of french bread and grill. Sauteé the purple onion.
Remove roast beef from au jus and place on grilled garlic toast, place sauteéd onion on roast beef, place cheddar cheese on top of roast beef and onion and broil untill top of cheese is golden.
